Ingredients

Scale

Ingredients

For the Steak

  • 2 (8 oz) ribeye or sirloin steaks
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 2 cloves garlic, minced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp fresh rosemary, chopped

For the Potatoes

  • 4 medium Yukon Gold potatoes, diced
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • 1/2 tsp smoked paprika
  • 1 tsp fresh thyme, chopped

Instructions

Instructions

  1. Prepare the Potatoes

    • Preheat the oven to 425°F (220°C). Toss the diced potatoes with olive oil, salt, pepper, garlic powder, smoked paprika, and thyme.
  2. Roast the Potatoes

    • Spread the potatoes on a baking sheet in a single layer. Roast for 30-35 minutes, flipping halfway through until golden and crispy.
  3. Season the Steak

    • Pat the steaks dry with paper towels. Rub them with olive oil, salt, and black pepper for even seasoning.
  4. Sear the Steak

    • Heat a cast-iron skillet over high heat. Add 1 tbsp of butter and sear the steaks for 3-4 minutes per side for medium-rare, adjusting the time based on your preferred doneness.
  5. Add Garlic Butter

    • Lower the heat, add the remaining butter, minced garlic, and rosemary to the pan. Tilt the pan slightly and spoon the melted butter over the steaks for 1-2 minutes.
  6. Rest the Steak

    • Remove the steak from the pan and let it rest for 5 minutes before slicing.
  7. Serve & Enjoy

    • Plate the steak with the crispy roasted potatoes and garnish with extra fresh herbs if desired.

Notes

  • Choosing the Right Steak: Ribeye offers more marbling and flavor, while sirloin is leaner but still tender.
  • Checking Doneness: Use a meat thermometer to ensure accuracy:
    • Medium-rare: 130-135°F
    • Medium: 135-145°F
    • Well-done: 155°F+
  • Crispier Potatoes Tip: Soak diced potatoes in cold water for 15 minutes before roasting to remove excess starch.
  • Alternative Cooking Method: You can also cook this as a one-pan dish by searing the steak first, then finishing both the steak and potatoes together in the oven.
