  3. Assemble the Queso – In a foil pan or cast-iron skillet, combine the cheeses, cooked meat, diced tomatoes, onions, jalapeños, milk, and seasonings. Stir lightly to distribute the ingredients.

  4. Smoke the Queso – Place the pan in the smoker, close the lid, and smoke for 1.5 to 2 hours. Stir every 30 minutes to ensure even melting and flavor absorption.
