  1. Preheat the Oven
    Preheat your oven to 375°F (190°C) and line a 12-cup muffin tin with paper liners or lightly grease it.

  2. Mix Dry Ingredients
    In a large bowl, whisk together flour, sugar, baking powder, cinnamon, and salt until well combined.

  3. Mix Wet Ingredients
    In a separate bowl, beat the eggs. Add milk, oil, and vanilla, and stir until smooth.

  4. Combine Wet and Dry
    Slowly pour the wet ingredients into the dry mix. Stir gently until just combined. The batter should be slightly lumpy. Do not overmix.

  5. Add Optional Toppings
    If using, mix brown sugar and extra cinnamon, then sprinkle on top of each muffin for a sweet crust.

  6. Fill and Bake
    Divide the batter evenly between the muffin cups, filling each about ¾ full. Bake for 18–22 minutes or until a toothpick inserted in the center comes out clean.

  7. Cool and Serve
