  • 2 chipotle peppers in adobo sauce (plus 1 tbsp of sauce)
  • 3 garlic cloves, minced
  • 2 tbsp fresh lime juice
  • 2 tbsp olive oil
  • 1 tsp ground cumin
  • 1 tsp dried oregano
  • 1 tsp salt
  • ½ tsp black pepper

  • 1 ½ lbs flank steak (or sirloin)
  • 1 tbsp olive oil, for cooking

    • In a blender or food processor, combine chipotle peppers, adobo sauce, garlic, lime juice, olive oil, cumin, oregano, salt, and pepper. Blend until smooth.
  2. Marinate the Steak

    • Place the flank steak in a dish or resealable bag. Pour the marinade over the steak, ensuring it’s well-coated. Cover and refrigerate for at least 1 hour (preferably overnight).
  3. Preheat the Grill or Pan

    • If grilling, preheat to medium-high heat. If using a stovetop, heat a cast-iron skillet over medium-high heat with 1 tbsp of olive oil.
  4. Cook the Steak

    • Remove the steak from the marinade and shake off excess liquid.
    • Grill or sear for 4–5 minutes per side (for medium-rare). Adjust the time based on your desired doneness.
  5. Rest and Slice

    • Transfer the cooked steak to a cutting board and let it rest for 5 minutes.
    • Slice against the grain into thin strips for the most tender bite.

  • Marination Time: The longer you marinate, the better the flavor. Overnight is best!
