Ingredients

Scale

Ingredients

For the Meatloaf:

  • 2 lbs ground chicken
  • ½ cup breadcrumbs
  • ½ cup grated Parmesan cheese
  • 2 eggs
  • ¼ cup milk (or chicken broth)
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tbsp Soy sauce
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp Italian seasoning

For the Glaze:

  • ½ cup ketchup
  • 2 tbsp brown sugar
  • 1 tbsp apple cider vinegar or Soy sauce

Instructions

Instructions

  1. Preheat the oven
Preheat your oven to 350°F (175°C) and grease a loaf pan or line it with parchment paper.

  2. Sauté the onions and garlic
In a small pan, sauté the onion and garlic over medium heat for 2-3 minutes until soft. This enhances the flavor and prevents a raw onion taste in the meatloaf.

  3. Mix the meatloaf ingredients
In a large bowl, combine ground chicken, breadcrumbs, Parmesan, eggs, milk, sautéed onion and garlic, Soy sauce, salt, pepper, and Italian seasoning. Mix gently—don’t overmix to keep the meatloaf tender.

  4. Shape the meatloaf
Transfer the mixture to a loaf pan and smooth out the top. Alternatively, shape it into a loaf on a baking sheet lined with parchment paper.

  5. Prepare the glaze
In a small bowl, mix ketchup, brown sugar, and apple cider vinegar until smooth. Spread half of the glaze over the meatloaf.

  6. Bake the meatloaf
Bake at 350°F (175°C) for 45-50 minutes or until the internal temperature reaches 165°F (74°C).

  7. Add the remaining glaze and finish baking
Remove the meatloaf from the oven and spread the remaining glaze on top. Bake for another 5-10 minutes until the glaze is caramelized.

  8. Rest and serve
Let the meatloaf rest for 5-10 minutes before slicing. This allows the juices to redistribute, keeping the meatloaf moist. Serve warm with your favorite sides!

Notes

  • Avoid dryness: Adding milk or chicken broth helps keep the meatloaf moist.
  • Use a meat thermometer: For the best texture, remove the meatloaf from the oven when it reaches 165°F (74°C).
  • Make it gluten-free: Use gluten-free breadcrumbs or replace them with ground oats.
  • Customize the flavor: Try adding chopped bell peppers, shredded carrots, or a pinch of smoked paprika for extra taste.
  • Storage tip: Store leftovers in the fridge for up to 4 days or freeze for up to 3 months.
