Instructions
Instructions
-
Cook the Ground Beef
- In a skillet over medium-high heat, cook the ground beef until fully browned, about 6-8 minutes.
- Drain excess grease, then stir in salt, pepper, and Worcestershire sauce. Set aside.
-
Prepare the Special Sauce
- In a small bowl, whisk together mayonnaise, ketchup, pickle juice, mustard, Worcestershire sauce, salt, and pepper.
- Set aside in the refrigerator while preparing the quesadillas.
-
Assemble the Quesadillas
- Lay a tortilla on a clean surface. Sprinkle ½ cup of cheddar and Monterey Jack cheese over one half.
- Add ¼ of the cooked beef and pickle slices (if using).
- Sprinkle another ½ cup of cheese, then fold the tortilla in half.
-
Cook the Quesadillas
- Heat ½ tbsp butter in a skillet over medium heat.
- Place the folded quesadilla in the skillet and cook for 2-3 minutes per side, until golden brown and crispy.
- Repeat with remaining tortillas and filling.
-
Slice and Serve
- Transfer to a cutting board and let cool for 1 minute.
- Slice into wedges and serve with special sauce on the side.
Notes
- Want a spicy kick? Add diced jalapeños or a drizzle of hot sauce inside the quesadilla.
- For a healthier version, use whole wheat tortillas and lean ground turkey instead of beef.
- Don’t overfill the tortillas—too much filling can make them hard to flip and cook evenly.
- To make ahead, store cooked beef and sauce in the fridge for up to 3 days. Assemble and cook fresh for best results.
