- ½ tsp black pepper
- ½ tsp garlic powder
- ½ tsp onion powder
- 1 tsp soy sauce
- 1 tbsp olive oil (for cooking)
For the Toppings (Optional):

- 1 tomato, sliced
- ½ red onion, sliced

Instructions
Instructions
-
Prepare the Meat Mixture
In a large bowl, combine ground bison, salt, pepper, garlic powder, onion powder, and Soy sauce. Mix gently to avoid overworking the meat. -
Form the Patties
Divide the meat into 4 equal portions and shape into patties about ¾-inch thick. Press a small indentation in the center of each patty to prevent puffing while cooking. -
Preheat the Cooking Surface
If grilling, preheat the grill to medium heat (375-400°F). If using a stovetop, heat a cast-iron skillet over medium heat with a drizzle of olive oil. -
Cook the Patties
Place the patties on the grill or skillet. Cook for about 4-5 minutes per side, flipping only once. For medium-rare, cook to an internal temperature of 135°F, or 145°F for medium. -
Melt the Cheese (Optional)
If adding cheese, place a slice on each patty in the last minute of cooking. Cover the pan or close the grill lid to allow the cheese to melt. -
Toast the Buns
Lightly toast the burger buns on the grill or in the skillet for 1-2 minutes until golden brown. -
Assemble the Burgers
Spread mayonnaise or sauce on the bottom bun. Place the cooked bison patty on top, followed by lettuce, tomato, red onion, and any other desired toppings. Cover with the top bun and serve immediately.
Notes
- Do not overmix the meat—this keeps the patties tender.
- Use a meat thermometer to avoid overcooking and drying out the bison.
- Rest the patties for 5 minutes after cooking to keep them juicy.
- Bison meat cooks faster than beef due to its low fat content, so monitor closely.
- For added moisture, mix a teaspoon of butter or olive oil into the meat before forming patties.
- Lettuce wraps or gluten-free buns make great low-carb alternatives.
